welll. 1st of all you have to study the actual dinosaur the fossil and the models carefully.

How big do you plan to make it? If very large, I thought you could get a Horizon kit which will be excellent reference for you. This is of course if you really do want to do the Jurassic Park version.

The Jurassic Park 1/1 scale model/puppet is about 4ft tall and 11ft long. Do you have that space, and would your parents let you do it? If you're serious about this, I think you should re-assure us first that you have permission and will actually do this before I take the time to help you further.

don't just grab any modeling clay. be sure to know everything you need before geetting the stuff. otherwise you'll be in the middle of work and you'll find out you got soemthing wrong or you forgot to get something

Are you doing the head or full body, I'm still not clear on that? You also need to know the correct type of clay to get, depending on how you plan to do the armature. You would have a nightmare job sculpting the crests using wet clay as it will dry out faster than you can work on it.
How do you plan to do the armature? Let me know and I can advise on the clay.

You really need something solid to place inside and support your sculpture, and clay won't do that. Are you doing the neck too? If so, find a wood post or metal tube/rod you can mount to a board and put your clay on top of that. Think hard about your armature first and post updates here as you build it. It needs to be strong and fit well inside the bust you intend to sculpt. It's a lot easier to work out how to make your armature fit by enlarging a good side view image of the Dillos head to full scale on a photocopier or other printer, then lay your armature on top of that as you build it. This way you can see if it fits correctly and make adjustments if neccessary. You only want the armature to take up no more than 30% of the interior and try to get it as central as possible away from where you imagine the surface of the skin will be on your sculpt. There is a way where you can build the armature so it's roughly the shape of the final sculpt, and only requires a thin layer of clay on top of that, but this may be more complex for a beginner, and definitely requires a non-drying oil-based clay. Work on the amature first before buying any clay, and show us what you have. If you like, I should be able to find a piccy of the Dillo head and neck for you to use.

I would do something easier before working on something as complicated as a dilo. I would probably do a compy or gallimimus.
