It really depends how it's made. If it's in a soft clay sculpture and the sculpture is no longer needed, then the clay can just be scraped off the armature.

But how would you remove it if you want to make another sculpture, but you want to keep the other one as well?

To keep a past sculpt that's made in a soft non-hardening clay, you will need to mold it and create a cast. Then the clay from the original sculpt can be scraped off and reused.
To do a sculpture in a hardening clay that doesn't require a mold, use a firing clay or something similar to Supersculpey.
